How long can you leave a mature cuke on the plant before it needs to be harvested?

I take mine off as quick as possible once they're ready as the plant will then keep producing.

Why would you want to leave it on the plant, once it's ready, other than if you're on holiday?

There is more chance of it becoming bitter if you leave it too long
