Need to dig one of mine up now. Had good germination but no idea what they are like beneath the ground. Mine are either countess or avon resister (depending on which ones it was that my mother accidentally weeded for me).

I went for a nosey round a local vegetable show a couple of weeks back and the winning parsnips were very slim but about 2ft long. I couldn't see the point personally because only the top 6 inches looked worth eating. The rest of it was just a very slim root.

i nearly dug one up but i couldnt bring myself to do it,the little voice in my head said "dont do it dont do it dont do it" so i didnt do it  :wink:
carrots are ok though not a bit of fly on em must have been all that rain in the summer that seen them off.

A great recipe for using parsnips:

couple of parsnips (I use about 1 lb) and a couple of carrots diced up
Plenty of olive oil in a pan
1 onion, sliced and diced and sweated
2 pints vegetbale stock
Plenty of freshly ground black pepper

Cook for 30 minutes, then put through a liquidiser


Yummy in the extreme....my 6 year old and 3 year old can't eat enough of it (yet they don't normally like veg!).

Well, my one parsnip was dug up on Christmas Eve - and it was a beaut.
No forking and a lovely shape and colour, and enough for all 10 of us.

If only I had had more!

Our Christmas one was 18" long - with another goodness knows how much left in the ground. I didn't dig a deep enough hole alongside it! They're not always this good, but where they are this year is an exceptionally light piece of ground. Shame about this thing called 'crop rotation'.
Did it really tell you to do THAT on the packet?

Brucesgirl - I am delighted about your parsnip.  I even mentioned your single parsnip at our Christmas dinner.  We were giggling about the idea you may have had a ceremony to lift it, singing Carols to welcome it to the world.  It all got a little silly actually.  Glad it fed you all   :wink:

We got loads of teasing about it. Felt better when a farmer friend told us he had only managed to grow two this year. In his garden, not on his farm.
