Cabbage Greens

Cabbage Greens

Can all cabbages be used for greens before they mature? I know with spring cabbage you can use the thinnings for spring greens, but does this apply to them all? I was planning on planting my cabbages close together and then thinning as they mature to give me some extra crops.
