Mega beetroot

I have a few beetroot left in the ground.  As they are sooooo large (and surprisingly not at all woody!) how long can I leave them there.  Do they have to be moved before any heavy frost?  I must admit the tops are looking a bit sorry now and have gone pretty brown and keeled over.  If I do lift them and store them in some dry compost (which I did last year) any idea as to how long such big beetroot will last?

Sorry, having read this it sounds like I'm bragging!  It was nothing to do with me they have got that big - I forgot all about them!

I should lift them, twist off most of the leaves and store in damp sand, as per carrots.

I've got some too  :D  I picked a bagful but found yet more of the monsters hiding under some  calendula  :nowink:

I will be roasting them and eating them with everything for a week

On the plot I still have chioggias and golden ones, and yet more monsters. Serves me right for sowing too many  ::)

I already have a larder full of pickled beets, beets pickled with shallots and beetroot relish.  Beetroot choc cake is lush and is well worth making  :)

Oh you can never have too many beetroot Compost Queen.

Gave some to a friend who texted me the day after asking if she had caught a stange disease from the beetroots as it turned her pee bright pink. :lol:

I'm roasting more of the beasties today.  I roast them in foil for rather too long to make them go all sticky and caramelised. They're lush  :)

Thanks for all the suggestions.  Beetroot chocolate cake sounds a definite possibility!  I thought you had to store them in dry sand/compost, I didn't realise it was damp sand.  How long will they last like that roughly?
