I haven't done gooseberries myself, but the link HERE tells how to do it. Most important is that you blanch the gooseberries long enough to break the skin or they'll pop during drying and make a bit of a mess.

the jostaberries could be a turn your mouth inside out job, i might enjoy the experience   altough i have read that things sweeten once the sugar is concentrated and water removed. ;) :)

I think those goosgogs would need to sweeten up a lot to stop them turning your mouth inside out.

Well they may be interesting. :)
We haven't planted out our fruit bushes yet as the part of our lotty we have set aside for it needs the thick London clay improved so I will have to wait for a while for the jostaberries.  :(

Everyone talks about how sour gooseberries are but I have an ancient green one, that once ripe is very sweet and we sit in the fruit patch and eat them as is. Few make it inside.

I'd never dry unripe fruit, only just ripe fruit, which should solve this problem. And yes, fruit does sweeten when concentrated in drying.
