Hi two quickies:

I want to make sundried toms and store in oil. However, I'm a little dubious as to the longevity of the oil in my sterilised jar if I do this. Would it be better to store the dehydrated toms in ziplocs ? Surely though, when I defrost them, they will increase in water content, so they would still not be suitable to put into oil for Christmas presents?


Second question - cherry tomatoes. I'd like to store them whole and read somewhere about canning using a water bath.
Does anyone have basic step by step instructions as to how to can using a Maslin pan on a stove top please?  I also have an apple question, but I'll start a new thread for that!

Properly dried tomatoes can be kept in a bag or a jar, they don't need to be frozen - the salt and drying is what preserves them.
