I just discovered yesterday that cattle broke into my potato patch and devastated most of crop.  Half the stalks have been eaten, the other half trampled. They were a maincrop, planted early May. Should I salvage whatever potatoes I can or leave them in the ground to hopefully resprout for a late harvest?

Leave them be - if they are still attached they will continue to grow.
