finally used up the last lot of frozen fruit, damson with next doors rhubarb saw this combination on the net and is delicious.

I just guessed and used about equal wieght of each 2lb 8oz then double again for sugar 5lb not too sweet. just polished off a wholmeal doorstep for supper.

I make blueberry and lime, which is a classic combination so not 'unusual', but it really is delicious!  As well as scones, toast, croissants, etc., it's lovely on ice cream (I make it the consistency of a conserve rather than a stiffer jam), and my daughter even has it in her Brie sandwiches!!

1.3kg Blueberries
Zest & juice of 4 limes (I use more if they're the small ones)
1kg Preserving sugar with added pectin

Put the bluberries, lime zest & juice and half the sugar into a non-metallic bowl.  Lightly crush the berries with a potato masher.  Ensure everything is evenly combined and leave for four hours.

Tip the mixture into a maslin pan, stir in the rest of the sugar.  Heat slowly, stirring continuously until the sugar has fully dissolved.  Increase the heat and boil rapidly until setting point is reached.
