Frozen strawberries
« on: April 13, 2012, 20:03 »
I have over 2lb of strawberries that I froze from last years harvest.
Would they still be any good for something, thought about making jam with them.

Jam? lovely idea -but you will need added pectin to get it to set.

As mum says jam would be fine with added pectin or you could make a strawberry and orange jam which wouldn't need added pectin.
Tastes a bit like strawberry and cointreau.
2 lb strawbs, 2lb sweet oranges, grated rind and juice of 2 lemons, pint of water and 3lb sugar.
Peel the rind from oranges, and cut into thin strips.
Cut away the pith and put the pith into a muslin bag with the lemon pith and pips.
cut the  orange flesh away from the membrane.
Add the membrane to the bag of pith and pips.
simmer the rind in the water with the lemon rind and juice  and the bag of pith and pip until soft. About 45 mins.
Remove the muslin bag and squeeze the juice from the bag into the pan.
Add orange segments and strawbs to the pan; simmer until tender but holding its shape.
Add sugar stir until dissolved and boil until set.

If you didn't want to make jam you could puree the strawbs and make a mousse or icecream or sorbet.
