Firstly I simply love this forum, I came across it while looking for information for keeping chickens.
I found the cooking section and have spent many hours reading information on jams, boy my preserving pan is going to be hot this year.
Anyway was thinking of sharing how I use my slow cooker for cooking. I have tried cooking most meats, such as beef joints, stews, turkey crowns lamb pork etc  with this method.

I actually cook all my meat in a vacuum bag  in the slow cooker,with just a few additives that are needed.

Cooking it this way the meat cooks in it's own juices nice and slowly and will not loose any of its flavor.  the other advantage in cooking it this way is the storage of the cooked food.
As the food has been cooked in the sealed bag, germs and bacteria are unable to get in, If stored at the correct temperature in the fridge it last for a long time (3 weeks safely)

Individual meals can be cooked and stored for later use, or you can cook beef stew in one bag, steak and kidney in another and beef curry in another bag. all cooked in the same cooker at the same time.

I only use this method as the meat tastes so much better, and I can mix and match what I  cook at the same time. Cooking Chuck Beef using this method,makes the best beef for sandwiches it just melts in your mouth.

I've never heard of that - sounds fascinating.  Where do you get your bags, and presumably you don't have lots of veggies / sauce in the bag with the meat?
I try to take one day at a time, but sometimes several days all attack me at once...

Hi Yorkie

It is actually called Sous Vide cooking. I started it just using the slow cooker and using the recommended cook times for the slow cooker, I have now made my full Sous Vide bath now.

For the bags you can get them at most places, or on line. I get mine from a butchers wholesalers at a trade price. they must be food grade
For liquid content in the bag, For beef and it is dependent on what I am cooking. for a nice thick stew or steak and kidney, I don't add any water as the water in the meat comes out and it cooks in it's own juice and I use this as it's own gravy,

If I want to add water it is added as ice so you can't suck it out when pulling the vacuum in the bag.

For a steak and kidney I just dust the meat with flower plus seasoning, seal the bag and put it in the cooker. if I wanted more gravy I just add a couple of ice cubes and then seal the bag.

I understand you can use a zip-lock bag if you can get most of the air out. but I have tried this myself as I use a sealer machine.

I have a sealer machine and didn't realize you could cook with the bags intact. Is this any vacuum bag or special ones for cooking?

Yes you need food grade bags, as an example like like the ones on this site. I have nothing to do with this company as I get my bags wholesale from a local supplier,
