That Damned Rabbit. I'm half way through doing this !

ROAST RABBIT !

I've just got to the marinading stage and the bunny will go into the oven this evening.


For the marinade.

Three Tbs of Olive Oil.
Half a pint of red or white wine ( Just borrowed some of Kazs best red)
One slice of onion ( Except I read it as a sliced onion   )
Clove of garlic crushed.
One Bay leaf.
Two Tbs of wine vinegar.


Other Ingredients.

One Young Rabbit
2oz of softened butter
Four Slices of StreakyBacon

Combine the the marinade ingredients and pour over the rabbit and leave for several hours. ( This is the stage I'm at now  )

Remove and drain well. Strain the marinade. Cover the rabbit with the softened butter and place some inside. Cover the bunny with the bacon and place in a hot oven (200c 400fGas Mk 6) for an hour, basting with the butter and the marinade regularly.

Remove the rabbit from the oven and skim any fat from the juices. Add more of kaz's red wine if needed and thicken if necessary and the jobs a 'goodun'

Try adding a stick of cinamon and a few raisins for an even better taste.
