Low/No Sugar Fruit Spreads

Hi Fountains Of Fruit Preserving Wisdom!

I've got a friend (no, really I have!) who has had a gastric band fitted and is on a very strict diet plan. She has IBS as well and has been buying fruit spreads which are made with fruit and grape or apple juice. I'm guessing they are thickened with gelatin instead of pectin and might be suitable for diabetics as well.

She has a plum tree in her garden which is full of fruit and she doesnt want to see it go to waste as she cant make her usual plum crumbles and sugary treats....does anyone have any recipes that might be suitable for her?

I've not had much chance to speak to her and wanted to know what brand she was using so I could look and see just what the ingredients are as it would be a shame to see all those lovely plums wasted  :nowink:

We made several pounds of sugar free chutney with these main ingredients...

We left out anything to do with the sweetener, especially honey etc, but kept the vinegar of course, as we need to preserve the stuff!

I can't find the recipe we used, but the basis is the same, and we used our own eating apples too...

That looks a good site for recipes for me as well, I try to follow low GI as much as possible and theres some good recipes to try out :)
