Ops!
Limoncello is very nice.
Problem is, it depends on very good
unwaxed lemons.
The bigger the better as well.
It's only like doing Sloe Gin.
You need at least 5/6 good sized lemons
Small ones, about 8/10.
And you have to take all the zest off
No juice needed, so you can make lemonade as well.
The pain is taking that zest off without getting
some of that white pith. Which will give a bad taste.
We do it with a cheap vodka.
Once again, sugar to taste.
We use 6/8 ozs for a bottle of vodka.
Then just stick it in jar and shake it every day.
But you need a good month to get a good colour.
I normally leave it six-weeks.
Stronger taste, more lemons obviously.
All down to personal preference.
Some recipes add the sugar later.
