How do I know when they are ripe and ready to eat?

It tends to be quite late in the season and they change colour to the colour you'd expect.
I try to take one day at a time, but sometimes several days all attack me at once...

Yes, they turn butternut squash coloured (more orange) when ready  :)

If they're not ready by the time the frosts are imminent, cut them off with a good bit of stem (couple of ") and put them on a sunny windowsill.
