How do I know when they are ripe and ready to eat?

It tends to be quite late in the season and they change colour to the colour you'd expect.

they are green at the moment.

Yes, they turn butternut squash coloured (more orange) when ready

If they're not ready by the time the frosts are imminent, cut them off with a good bit of stem (couple of ") and put them on a sunny windowsill.
