I don't know what pancake day is, but I think every day could be pancake day if you had eggs like that!
Naughty me - I should have said Shrove Tuesday - which of course is the day before the beginning of Lent on Ash Wednesday.
Traditionally it was a time for using up fats and sweet stuff before the Lenten Fast, and I suppose as there were eggs around Pancakes were on the menu.
As we are now a "multi-faith" society, Pancake Day seems to mean more than Shrove Tuesday to the majority of folk
Glad you like the eggs though - I am particulary pleased with them as it is my own breeding which has produced these birds, which I have named Higgledy Harriets
