Can you chop and freeze winter squash

Just noticed that the last two of my crown prince are starting to go off - small soft patches have appeared.

Assuming that there's still time to cut those off and leave good flesh, can this be chopped up and frozen? I don't want to throw it away if I can avoid it.

I would roast in between chopping and freezing, so yes you can. :)

I'd prefer not to roast first, just to allow me more choice for when I want to cook them.

Still, they're going off, so perhaps I'll experiment. Anyone frozen them raw? How do they defrost - are they soft when defrosted and perhaps only good for soups? PS why do we say defrosted, rather than defrozen?

i guess the water content would make them mushy after de freezing  :) There we can say it lol
roast squash still makes nice soup  :lol:

I cut into thin wedges, coat with oil and spices and freeze ;) Then roast from frozen.

Don't know how long they would last though, unless blanched most things start to deteriorate after 6 weeks or so.

I've never had them in the freezer for long, only already made into soup.

If you have time, why don't you make some curry? or other similar recipes.  I have had success with freezing this type of dish.

I remember once trying to cut and freeze fresh courgettes. Mega disaster. I suspect raw squash would end up the same way.

If I have to freeze it now, I cook it into a soupy mix and freeze in plastic containers in amounts I know I can use. mostly I do a lovely squash soup which I freeze in individual servings.

I have cooled, pureed and frozen pumpkin ofor pies - needs a squeeze and extra eggs though.  Have also frozen in chunks uncooked but have only used it for a barley and butternut squash bake, which it was fine for.  I always quick freeze it though.

I take the point. I suppost I'm not too experienced in what I might do with it, so I hoped I could leave my options open. I did hope that it might stay in some sort of solid state so that I could use it in, say, a curry afterwards but that seems unlikely now.

My options seem to be - blanche or roast before freezing and then defrost to make soup.

I have the same problem - due to the very cold weather they have caught the frost wrapped up in a normally frost free shed. I have roasted and also steamed before freezing - great to pull a block out for soup or mash.  Must try the oiled slices for the last few.   ???
