Green butternut squash: help!

Green butternut squash: help!

Hi.
some of my butternut squash is yellow and small, others are massive and green. What went wrong? Are the green ones ok to eat or shall leave them to colour. S :mad:orry to be a pain chaps.  ::)

I'm olny in my first year with BNS but I'd leave green ones as long as possible to see if they change colour. Most of ours have changed but still one or two green ones. If they don't change but are big I'd probably pick them just before frosts and leave to ripen in shed/greenhouse?

Are the big green ones shaded by leaves ? If they are getting plenty of sunlight they should change colour soon.

I picked one of my BNS a few weeks ago when it was getting a bit stupidly large, and since then it's been sitting in the sun on a windowsill. It's got really quite yellow - it's not done yet, but it has gone from totally green to nearly there, so far.

Curious - my 'Early Butternut' squashes started of a light mottled yellow and then gradually went a sort of mustard yellow - never green at any stage. Different variety perhaps?

Ahh ha the saga continues!! they are called BNS Rugosa by Franchi  (seeds of Italy) . Some were yellow and squash like to begin with, then I went on holiday came back some were huge like marrows and green. Just wanted to know is it ok to eat the green ones.
