I'm making loads of courgette soup for the winter.  There's another batch cooling down in the kitchen next door - smells lovely!

Penny, is that just courgettes and stock or other veg/flavours to bulk it out?

I fry up onion and garlic, add courgette and some potato (thickens it up), and I usually whack in some mustard powder, herbs, paprika, pinch of chilli and some (chicken) stock. 
When it's all cooked down I blend it and then stir in cream cheese (the more the better!).

I'm lucky in that my kids seem to love it, so it's a great one to have handy in the freezer for winter days.  We've been eating quite a bit of it over the last few weeks and still haven't gone off courgettes (yet).

I grew two plants from seed and both germinated and grew well. Daughter has one, I have the other. Mine is producing courgettes regularly but I am at the point where I am looking to see if one is ready to harvest each day, which for me, is just what I wanted. It means that every courgette is a delight rather than a chore! Only two of us though  ;)

I am liking the sound of the soup.....got some courgettes in the fridge so going to give this a whirl. And just remembered I have a stash of pint milk containers too, handy to freeze soup in.
Do you peel the courgettes or leave skins on?
I don't like cream cheese though so will leave that ou I think

If the courgettes are young I would think if you blend them you would leave the skins on, probably adds a bit more fibre.  Have you tried adding one of the blue cheeses to soups when they are in the bowl, they melt slowly but of course they aren't to everyones' liking.  A few weeks ago I had broccoli soup which had some Dorset Blue Vinny added.......heaven. ::)

I don't peel the courgettes or the potatoes (they're second earlies at the moment) if they've just been lifted.  I blend it all up very well so it's just nice and gloopy.

I don't like cream cheese either, but it works well in the soup.  I think stilton would work even better but don't think my kids would like that!! (They don't like "spicy", which can encompass a whole range of tastes...).
 :D

Let them grow big and then make some nice marrow gin. Never tried it and by all accounts it's pretty disgusting  ;)
