Bitter cabbage

I have just tried my 1st greyhound cabbage of the season, very disappointed, so bitter I had to throw it away, defo not edible. Anyone know why?

Usually if leafy veg has been very slow growing it gets bitter.  Could that be the problem  :unsure:
