Broccoli bolting.

Some of my broccoli has bolted, it's already covered in small yellow flowers and it isn't even fully grown yet!
Anyway as I love shredded broccoli stalks in salad is it still okay to use them?
I take it I can't use the flowering heads for anything or can I?
Lastly do I keep the plants or are they finished now that they have bolted?
So many q's............  ???

If it's 'ordinary' broccoli take the heads off and it will produce more small spears. But check that it is not broccoli rabe ..which doesn't produce any more.
You can use the stems and leaves in salad or

pasta recipe here
