Has anyone any tips on how to stop rhubarb going to seed?

It's what the plant is designed to do, so you can't stop nature.  All you can do is to cut the flower stalk off at the base.

Seems like a good year for flowers on rhubarb - I've chopped loads off my plants this year

You can't fight nature.  It is hotwired in to reproduce, all you can do is delay it.  Rhubarb however is one of those plants that is just too big and self sufficient to alter it's growing rate.

Just cut out the flowering stems when they appear.  The rest of the plant will be fine.

The same cannot be said for plants like onions or lettuces.  Once they bolt, all you can do is salvage what you can from the crop.
