How are they getting into you nest boxes? Are your hens in a run or free ranging?.
How long have you had this problem?
There are several ways of minimising rats, good husbandry, fen traps, poisons, electricution traps, sticky sheets and so on. You will never be rat free as they say we are always no more than 10 feet away from a rat.
Are you sure it's the rats eating the eggs, hens can do it as can magpies etc.

Oh hello by the way. Why not take a little visit to the welcome forum and introduce yourself properly   :)
Staffies are softer than you think.
