I've been picking my parsnips since september and a fair size they were even back then, tasty as they were I've been waiting for the frosts to sweeten them up, now that the inches of snow have been and gone, and the -12 temperatures have taken their toll I find that my snips are soggy when roasted (par-boiled or not).
     Has anyone else had this problem? and should I maybe have tried to protect them in some way?

What temp. are you roasting at, for how long? Mine seem to be ok and my OH par boils them then cooks them for 40m at 180c (fan oven) and they cook and crisp up lovely

Hi Hilary
I've lost count of the amount of parsnips I've cooked over the years, being a chef for 25 of them but never encountered this problem.
Having said that I've never had the privilidge of preparing vegatables picked and cooked within the hour before.
The variety I grew was Gladiator, planted in late april, it was only after the heavy snow that I found this problem
