Help needed to thicken chutney
« on: October 25, 2009, 10:14 »
Can anyone help me, I made some marrow and tomato chutney last night and forgot to keep stirring it and consequently it stuck and burnt onto the pan. I've emptied the remaining chutney into a bowl and surprisingly it doesn't taste burnt but it's not as thick as it should be. Can I just put some more sugar in and re heat it or will that make it too sweet? The recipe included dates but I don't have anymore  so would it be ok to add currents instead? Oh, and has anyone any ideas for cleaning the saucepan, I think nothing short of sand blasting will get it clean

Re-heat in a clean pan and add a little cornflour mixed with water. This should do the trick. Put some biological washing powder in the burnt pan, boil it up and then leave it overnight.

Thanks Val I'll give that a try. I don't have biological powder, do you think soda crystals will work?

They should work but biological powder works better. If it's an expensive pan, it's worth buying the smallest pack of biological powder possible. We keep a bit in for when I burn the preserving pan!

It's a bit gross but it worked for me :D......soak pan for a bit and then put it out in garden where your slugs and snails are!

I found this out by accident.....I burnt a big pan and when I couldn't clean it I threw the dirty pan up the end of the garden because I was soooo very cross. The next day the pan was spotless...a miracle
