Also read this in the hairdressers mag, which I do anyway but might give someone an idea for dinner.
Cut strips of chicken breast, dip in flour, dip in egg then dip in breadcrumbs with whatever herbs etc. you want in the breadcrumbs, then fry can't remember how long for but shouldn't be too difficult to see when they are burnt to a crisp.

i make these a lot, when i find cheap herbs (reduced, ususally use parlsey, coriander) i make breadcrumbs from stale bread and freeze them, then add the herbs and stick back in freezer, sometimes with some garlic thrown in too.  then i have the crumb coating ready to go it defrosts in minutes
i bake mine in the oven - they are way better than anything you can buy

might do this for dinner tomorrow as have stale bread and some parsley too

Pork chops are good with this as well.  I do mine in the oven as well, just got carried away quoting the recipie.  No bread for the ducks at the rife (river, drainage ditch wotsit) this week LOL.
