Store or leave Beetroot?

It is end of August and there is a slight coolness in the air signifying the start of the end of the growing season. I am wondering about whether I need to lift and store my Beetroot, Swedes and Turnips (about a dozen of each) or whether they are fine where they are and I can just lift them as I need? I don't need the ground for anything else and would only green manure the ground if it were vacant at this point.

Would the roots go woody or too large and flavourless if I leave them in til say February? We don't get hard frosts down here so ground would still be open then.

They will be fine in the ground. Pull some earth against them to give them a little protection.
