im growing tomatoes for the first time, one of the guys on the site came and started taking off what he refered to as (Suckers) to me they where shoots comming off the main stem, he said i had to remove them and all the lower leaves, I told him to stop till I asked you guys lol he did two plants but now they look like one stalk with a couple of flower bulbs on top lol

There are 2 types of tomatoes depending on variety, some are lower growing bushy types (determinate) and tall cordon or vine types, (indeterminate) The seed packet usually tells you which type you are growing.
The tall types do get the side shoots 'pinched out'

Thomson, was it the little shoots that pop up between the main stem and the biger leaves that branch off that your plotmate was picking off?  I pinch out these side shoots on most of my toms because they're the cordon type; as  mumofstig says, if you check which type you're growing, it will tell you whether you're supposed to take off side shoots.  I don't take off any other leaves now, but later on in the season I'll take off lower leaves as they get yellowy.
