Here there were to types, Blacks and Reds and they looked a lot alike to me. The Reds were highly agressive but the blacks not so bad.

The meat is high in protien and very low in cholesteral and the taste is heavenly. My MIL had some but when the market crashed she sent them to slaughter. You do not just walk out and collect eggs, it's the males that guard the nest and they will protect it with their last breath if needed. My MIL could isolate them with a series of gates to collect eggs.

 And I don't say this often but they are stupid birds. If they would lower their heads say between a gate and gatepost instead of just lifting it back up they will pull backwards till they break their necks!

If you are interested  in larger 'poultry' investigate rheas they are supposed to be much friendlier and docile. Their meat is even better for you than ostrich, but I don't know where you could get them culled - you would need a ratite licensed abbatoir. Or just have them for their eggs!!

There's a place nearby that breeds emus, rheas and lots of chickens.

There's also a commercial emu farm towards Lincoln that farms ostriches for meat.
