Fastest growing intercropping veg?

I have beetroot, spinach, cos lettuce ( all germinated and been under a cloche outside), and rocket ( not sown yet). Which of these will be ready to pick first. I want to plant them in either my legume bed or my brassica bed. I am thinking of getting some different lettuce, maybe those that can be picked as baby plants, any recommendations would be great.

Also what are your favourite fast growing veg for filling up those spaces now, that will be needed in a month or two by other veg.

I always plant radishes as we love them  :D
