Upgrading from random to rotation

I am planning to enlarge my veg patch and run rotation beds, instead of sticking in random stuff in no particular order. As part of this new world order I find that I need to calculate how much stuff I have to plant/sow to get the yield I need. Can anyone point me to a reliable source please.

errrrrr, lets just say after 10+ years of growing me own I still get it wrong :?  for me there are too many variables, weather, pest etc all play a part so i can not plan to the last cabbage how many to grow.

I'm sure I've seen someone post the name of a good book for this but I'm blowed if I can remember it. :?

The Dr Hessayon book gives details of average yield per foot / metre (or something like that!).
I try to take one day at a time, but sometimes several days all attack me at once...
