We have them in abundance and are in the process of making elderflower cordial, but can anyone provide me with any other ideas and recipes for what else I can do with them.
Hate to see them go to waste.

a friend of mine bought me a bottle of something called St Germain, which turns out to have not only a beautiful bottle, but amazing contents, too - it's elderflower liquer and absolutely DIVINE.  Apparantly they only make 10,000 bottles (or is it 100,000?) a year, so I thought "Well, you can have sloe gin, so why not elderflower gin/liquer?"  so I've just done the following:

1 bottle of gin
Loads of elderflowers - enough to pack two medium (although they might be small - not sure on sizes) kilner jars
1/3 bag of sugar
rind of 1/2 lemon
4 juniper berries
1/2 pint water

Add sugar, rind and juniper berries to water and boil until sugar has dissolved
Pack sterilised kilner jars with elderflowers
Half fill jars with gin
Pour half of syrup into each jar
Fill with remaining gin
Seal and leave for a while somewhere cool and dark for as long as you can wait
Strain and bottle


I have absolutely NO idea what this will end up like, so if it's vile and anyone tries it, I apologise in advance!

Where about's in Norfolk are you BTW?
I was born in the old Norfolk & Norwich hospital.  :)

dose any one have a good pic of elder flowers ,some one gave me a drink of the cordial and it was lovely .
i had them pointed out to me by a friend but i thought they were a hog weed type of flower , sorry to hijack your post .

    They wont go to waste because they end up with elderberries on. These provide a good source of food for wild animals and birds. Please dont take any more than you need. Their lives depend on it , yours dont. :?

I would like a recipe for elderflower cordial , can anyone help ?

I once tried elderflower fritters , can't say I liked them but others might.

elderflower champagne

4 elderflower heads
4 1/2 litres cold water
1 lemon
650g sugar
2 tablespoons white vinegar

dissolve sugar in a little water allow to cool
squeeze juice from lemon and roughly chop rind into large pieces
place lemon and elderflowers in large jug
add vinegar and water
cover and steep for 4 days
strain off liquid into screwtop bottles
test after 6 days make sure it doesnt go too fizzy
ready to drink between 6 and 10 days

if its slow to work dont worry older flowers take some time to get going

i also would love a cordial recipe
