heres a rabbit recipe i found i wanted more of .i suggest you swap the lemons for lime,, for a even zinggy.. er  taste
1 rabbit
1 medium onion, peeled and sliced
2 stalks of celery, chopped
2 carrots, chopped
1 heaping tbsp. chopped thyme
1 heaping tbsp. chopped rosemary
2 bay leaves
12 black peppercorns
2 cloves of garlic, quartered
16 fresh sage leaves
2 tbsp. virgin olive oil
1 lemon

For the Bruschetta:
1 loaf of crusty French bread
Olive oil
Sea salt

Bring a large pan with salted water to the boil. Add the onion, celery, carrot, herbs and peppercorns. As the water returns to the boil, skim the surface. Add the rabbit and return to the boil. turn the heat down , cover and simmer very gently for one hour, or until rabbit is tender. Remove from heat and leave the rabbit to cool in the liquid or its gonna go hard  n dry .

Once cool, remove the rabbit from the pot, strip the meat from the bones and season the meat generously with salt and freshly ground black pepper.

put  the rabbit to a bowl. Peel the lemon and roughly slice the peel. Add the garlic, sage, lemon peel and oil just to cover.

Using your hands, mix the meat with the other ingredients, then cover and shove in the fridge for 48 hours.

Remove the  rabbit from thefrigde  and let it warm up in room temperature in the marinade.

In the meantime cut the loaf of french bread into medium-thick slices and brush both sides of each slice with olive oil and chuck on some   sea salt. Place the bruschetta in a single layer on an oven tray and bake full heat for 30 minutes, or until pale golden. dont burn em

Remove the rabbit from the oil, and serve with the  warm bruschetta. Squeeze some of the lemon /lime over the rabbit and bread to tasste

ok wil do  :wink: find a game keeper ./ butchers in your area who sells game .they wil get ya one .dont let them prep it for ya just do it at home  :wink: . cost about a quid

if he skins it they usually double the charge , you want ferreted rabbit or 22 shot . its ok to have shotgunned but they do contain a bit lead shot . i remember going for my first heart xrays and my innards glowing with pellets  so many that the radiographer assumed i had been shot lolo, oh and i have seen wild rabbit making 3 pounds oven ready when the robbing butcher payed 50 p each for them ,,,,,, from me  . needless to say i didnt sell him no more instead i advertised them myself in the paper shop for 150.p

I can paunch and skin and joint a rabbit no probs.  I'll let you know how much our butcher wants for them.

just got home from shooting a few i got 34 nice windy conditions easy to creep up on ..wouldnt mind getting 4.50p  for mine  :lol:
