Could I add some fresh seaweed to planting holes for fruit ?

I have 4 pot grown fruit bushes (2 gooseberry and 2 blackcurrants) as well as two rhubarb crowns, also in pots which I want to plant out in my new allotment soon.

Would it be OK to through in some fresh (rinsed) seaweed in the bottom of the planting holes ?

Yes, I just wouldn't use too much, otherwise the plants will sink as the seaweed rots down and might finish up a bit low. Perhaps put the seaweed in around the sides as you fill in, rather than at the bottom, then the plant will stay at the right height, and you can draw more soil in later as it settles.

Make sure it's well washed as the sea salt may not be the best for the plants.

Being five minutes walk from the beach, my plot has plenty of seaweed for all kinds of things.
Do tend to pick it from above the tide beach line, at its best at that level.
Make sure you bag has air holes to keep it aired carrying home. An old potato bag is perfect for that.
I cut it up into inch size pieces and mix with a handful of crushed leaves. Lay out on a path, and let the rain wash through it if its a rainy day or just hose it down. Do not leave it out in the open for more than a day, as it gets slimy.  The washing washes off some of the salt (not that I've ever known that as a problem), but mainly stops it going slimy.
Use it as a mulch and mix with home made compost on my asparagus beds and mix some in with home made compost in my bean trenches.
Have always used a load mixed in with my home made compost for my potato beds and bags.
If you use it as a mulch, make it quite a thick mulch, it will soon disappear below ground, the worms love it :)
Always been told, it is not a good idea to put straight into your compost bin, unless mixed well before with other material.
