Greek Gyros

Pork - sliced thinly (I used a 300g pack of stir fry pork strips)

marinade for 2 hours or more, in mix of
1/4 cup wine vinegar
1 tspn dried oregano
1 tspn dried thyme
1 tspn ground cumin
1 tspn paprika
1 tspn garlic granules
generous pinch of salt and the same of black pepper.
....................................................
Put pork into non stick wok and cook off liquid.
Stir fry til liquid has gone (it shouldn't taste vinegary by the end) and pork bits are browned and the edges crispy in places.

Serve, with some salad, in warm pitta pockets or in a soft wrap bread with some Tzatziki

Tzatziki
Ingredients

1 cucumber, grated. (Drained and squeezed dry in a towel)
1 or 2 cloves of garlic, grated (depends how much you like garlic  :D )
1/4 of a cup Greek olive oil
500g of strained Greek yogurt  (doesn't work quite as well with the 0% fat ones IMO)
1 or 2 tablespns of wine vinegar (to taste, some vinegars are more acidic to taste)
a good pinch of salt

Stir all together and chill.

Fantastic will try this one , ive got the tzatziki mix from greece , i keep telling people that the greek ones are the best we went to marys in our village very nice thanks for the recipe , you dont have one for paprika dip do you its got cheese in it and its xark red .

Ok just ate my gyros and it was fantastic hubby loved it as well had it with chips salad tzatziki so thank you Mumofstig for sharing , i only had some pork medalions but next time i will do it with some belly pork will try the paprika dip next time .
