They are supposed to be so light and airy that they sink down if you don't cool them upside down - I doubt mine ever will be, but I'm trying  lol.

I got 10 papers from Bakery Bits a few years ago, I'll need more for next year.

I saw a nice panettoni recipe made up like a summer pud but filled with racotta , chocolate , sugar ,and the bread was sprinkled with a sweet wine it looked nice then he sprinkled it with coco powder,  it was italian

A late update, the panettone tasted ok, but not a good texture  :(

For the day itself I made these

Flavour wise I used the Bakery Bits' Fiori di Sicilia instead of the spiced rum, and they were absolutely gorgeous.
So I'm giving up trying to make a big one - I'll make the buns every year, instead  :D

I like the way the recipe starts  'Like panettone but couldn't a whole one'  - yes, but no trouble eating a whole one  :blush:  and I could eat a whole tray of those buns as well  :lol:
