Jerusalem Artichokes - too early to eat now?

Jerusalem Artichokes - too early to eat now?

Hi all

Being a novice I hadn't cut my Jerusalem artichokes back or given them support. One has uprooted and so I've dug up the tubers. Are they okay to eat at this stage or not? There are loads so I hope they won't go to waste.

Any advice? Thanks

I have never eaten them this early. I normally cut mine to about a foot high at the end of October (so i know where they are) and start digging up about Christmas. If a bad winter is forecast i dig up a good few and leave em mucky in the fridge. It don't half annoy her indoors.

A trick I read was to cut down the stems just before the frosts and lay them over the 'chokes so they are protected from the frost and are easier to dig up when the ground is hard.

It isn't specific about harvesting time, but suggests that they can be harvested when you want once the foliage starts turning colour.

To be honest, if you've had to dig them up, you've got nothing to lose by cooking a couple to try initially.
I try to take one day at a time, but sometimes several days all attack me at once...
