Just bought 3 tubs for 50p each does it freeze? Other ideas please.

It does but it goes grainy on defrosting.

Use it as a substitute for cream in a quiche, or in cheesecake or as the base of a cheese sauce for pasta.

Or mix with berries and sugar to make a light fool, or add some gelatine to the fool mixture and some beaten egg to make a mousse.

Funnily enough, I bought 3 tubs in the C&C for 50p each and put them in the freezer.  I've only used one of them, and yes they do go a bit grainy, but keep wondering what to use them for.  I put the other on into a quiche the other week!

Wish I'd put them in my gnocchi, which were definitely NOT light and fluffy!   :( :(

Delia uses it as a topping in a vegetarian moussaka recipe of hers - make a white sauce, stir in the ricotta and then a beaten egg or two. I can vouch for it. Probably good on lasagne too.
