Clean them by rubbing vigorously under water to remove their small 'spikes', I use a sponge scourer
There are lots of recipes for pickled cornichons on line

The spikes aren't sharp actually, not when you try and eat them. I started off peeling them but now don't bother. They have very creamy flesh I find, a bit like avocado

I you let them grow bigger then you can eat them as small cucumbers, but sometimes they get bitter as they get bigger.
