Hollowed out Parsnip

I am sure this has happened to others - but this is the first time it has happened to me. One of my Parsnips has been eaten from the inside, Whatever it is has eaten the insides but has carefully avoided the skin. Other Parsnips in the row are unaffected. I think it is mice - has anybody seen this before and are there any suggestions as to what has eaten my parsnips?

Certainly made a neat job of it what ever it is!
Could you see any double teeth marks, that is normally the givaway with rodents.

You are almost certainly right to think mice. I have had this with parsnips, carrots and beetroot. Most likely long tailed fiedmice or voles.
