Recipe for Spicy Honey Nuts:
Oven on Gas 1 or 110C. You need a flat oven tray and a silicon sheet as the nuts don't stick then
450gm mixed nuts including skinned almonds& brazils, walnuts, pecan and hazelnuts and unsalted peanuts
2 tbs sunflower oil
3 tsp spice mix - mine had quite a lot of chilli powder in it (about a level tsp) cinnamon, nutmeg, cloves and green cardamom all ground together
2 tbs runny honey
1. Mix up the oil and spices in a largish bowl, add the nuts and half the honey and mix well
2. Put on the prepared tray and in the oven for 10mins
3. Shuffle up the nuts a bit with a spoon and add the rest of the honey. Give it another stir around
4. Roast for another 10 mins
5. Take out and let nuts cool completely
6. Break up any that are stuck together and store in a sealed plastic box or screw top jar. (I am putting mine then in cellophane bags)
They keep a couple of weeks, if they don't get eaten first
PS you can use a largish tbs of spice paste in oil like Pataks if you want a very spicy taste, but with no extra oil
