I'm cutting mine around now and using it to push the compost heap.

I'll leave anything that comes up  after to die back and hoe out any weeds between the plants. In early spring give it some fertiliser - high nitrogen is good. You can even use raw chicken manure - kills the weeds but the comfrey eats it up.

If you can use it, I'd cut it. I'm about to make the last cut cos the comfrey has gone mildewy and spoils the otherwise immaculate appearance of my plot     :D

When you say "cut" do you just mean cutting off the leaves an inch above the soil like cut-and-come-again lettuce? I've just been picking off the biggest leaves so far since my comfrey plant is little and only been planted out for a few months.
wistfully hoping to one day be mostly organic gardener in North London.

whack it down , throw in a bin, stir occasionally, dont use for aftershave, unless you are dating a minger, look forward to rat tailed maggots, and dilute 1/5 or 1/10 for toms or to get some goodness in that ,there ground. (dont drink as it is more smelly than my aunt mabels undies,) but if you are not proud you may do so!.all in all next to hoss muck , you  cant find finer for your muck heap , or water butt!. no animals where eaten in this information ditty.
The things I sow sometimes dont grow I'm sorley disenchanted. But oh what fun I have with stuff ,I havn't even planted.

as a sideliner for smelly composting stuff ! dig up the roots and grind , it is the original plaster of paris! so when you break your leg on the lotty , you can self heal. better to call an ambulance though, in case you forget thats 999 in this country , and any other ! well its just to late eh . so hobble off to the pub for a pint. Put this amongst things, I now know about comfrey.
