Sage & Onion Bread

I bought a loaf of this from the Co op, and it was yummy so thought I'd bake some for myself  :)

Alas and alack the local Trashco doesn't seem to sell  minced dried onions/onion granules  :(
We have Sainsbods & Asda within a reasonable distance - does anybody know if either of these sell them?

Asda do in our store

Failing that, indian shops sell dried fried onions which are ecellent in bread  :D

I have used a packet of onion soup and it worked. If you cannot get the dried onions it may be worth a try, but onion soup is sometimes hard to find, it must not be as popular as it used to be.

I buy Whitworths dried onions from occado.

According to this Mysupermarket Snasbods/ocado/Azzda all do them.  ;)

On the subject of onion soup. It is still popular in this household. I make it the traditional French way starting with beef bones slowly simmered in red wine (or cider) through to a rich stock then caramalising the onions forever topped with grilled cheesy toasted baguette slices. Gorgeous stuff especially with the addition of a splash of calvados or port. I did cock it up recently by using my large kelsae onions. An obvious choice but far too sweet. Mmmmm might have to make some more this weekend now it's been brought to mind.

I had a recipe for sage and onion bread from a very old Sainsburys bread making book.

It used minced or grated raw onions with the sage.

I make onion bread all the time, just lightly fry the chopped onion in very little oil, keeping some for the top (so I can see what it is in the freezer!) I divide a 500g flour mix into two cob loaves or flatten it out like a foccacia so less likely to be doughy. I have used caramelised onion too, but not on top as it burns. It depends how patient I am. I will try with sage for a change, I sometimes add cheese of some sort.

I was using a coarse, stoneground wholemeal flour from the wholefood shop so I found the raw onion gave a moistness to the bread.

As Tosca does, I fry off the onions, when I do onion and sage bread with whiteflour.

Wholefood shop closed long ago and have to rely on Sains wholemeal bread flour now.  Although that is a better flour then Morri's.
