As much as i love these, they are a blighter to peel and core, so i no longer peel them, but i have to core them unless i want to spend ages putting then through a sieve-i have no food mill thingie.
But last night i cut them in half and cooked them slowly. Then when they were cool., I simply scooped out the cores and pips with a spoon. Whizzed the skins with the pulp. Ta da. (don't know if this has been mentioned before but didn't see the harm in doing it again)

what are you making?

I've got 3 carriers of quinces to sort out before going on holiday and am looking for inspiration! Jelly is ticked off the list already and I am wondering about either vodka or brandy.

quince and cardamon jam, cheese, quince and orange marmalade and whatever scraps  i have left will go into vodka. this can be strained later on. have a fab hol

I have a basket full to deal with still and was dreading coring them.

 Like the idea of adding cardamom to the quince jam too  :D :D

I did some spiced fo over winter. And the other night we had quince tarte tatin....yummy! Even OH commented.

If you are short of time you can freeze at any stage and come back to it later.

I don't peel either, but I do core as nearly all of them have residents.

I'm very envious! I love quince but none here yet. :(  I have planted a tree so will just have to wait and see.

Eugh, now you tell me!!  Well, I'm sure as I made mine into jelly through a jelly bag, any 'residents' will now just be added protein!!  ;)
