I have quite a few beetroot still in the ground which I expect will not get much bigger now.

Will they be ok left in the ground and lifted when required or should I lift them all now before the frost gets to them?

I regularly leave my beets in the ground over winter.  I do earth them up covering the beet but not the leaves, I think this stops the beets getting that corky look around the tops.

you can pull them up twist off the leaves near the neck and store in dryish compost in the garage / shed

Light frost will not hurt them but hard frost will get into them and they will rot. Pull the earth up round them or cover with straw or other insulation and they should not hurt for a bit. They store ok in sand or peat. If you use the with vinegar you can bottle them and they keep well. If you make soups why not do that and freeze.

I just earth mine up a bit like Kleftiwallah does, and they seem to cope alright. It also stops the exposed shoulders getting gnawed by voles.
