 I have some huge corgettee and when I chopped them open I noticed the seeds.  What is the best way to use the seeds to store for next year

www.realseeds.co.uk is a really good site for seed saving information about anything.

Unless they have been grown well away from other courgettes, squash or pumpkins, it's not worth saving seed, because they will probably have cross-pollinated, so will not grow true next year.

If they were grown isolated then just wash them and leave to dry, keep in a paper bag/envelope until sowing time

If the original was an F1 variety the seed from the "offspring" is likely to be variable, and inferior to the parent.  You might like to experiment, but I recommend having a fallback of a known-variety too - just in case, after several months growing, you wind up with no usable Courgettes from the plants you have lovingly tended to ... there again, given the annual glut at this time of the year, that can seem like a blessing!
