You can make a summer pudding with a few other berries, even if you buy some.


You can use some at Christmas in a fruit salad.


You could use them as a component to make Jammie Olivers Christmas bomb

Nufan, you could make blackcurrant mousse, icecream, vanilla icecream with blackcurrant ripple, pies, tarts, crumble tarts, frangipane tarts, cheesecake, make a compote and use it to put in a sponge cake with cream. :D :D

You could make an apple and blackberry slump cake, or a blackcurrant streusel cake. These are lovely warm with cream or custard for pud.

I will post the recipes for the 2 cakes if you are interested.

Got one tupperware box of white and one of red.  Would have had one of black but the son of my sister's daughter ?  only likes blackcurrant cordial to drink so I made up a batch of 'real stuff'  he loves it. :)

No Bob at the moment I am down-sitting.  :D :D

The weekend has caught up with me and whatever bit my ankle a week or so ago, has set up some nasty swelling on the ankle, and I am hobbling around like the little old woman I am turning into. :lol:

Couldn't even manage to pick the rest of my blackcurrants on the last bush. Never mind, ice pack, pain killers and I will be back in the kitchen tomorrow to  deal with all the veg that is  sitting in the kitchen bullying me.

And luckily I discovered today that some kind person, who was trying to help clear up after the party, turned off the garden lights and my outside fridge and freezer.  :ohmy:If I hadn't discovered it I would have lost all my blackcurrants, and I haven't got that many.  :ohmy:

I made a beautiful cordial with my blackcurrants this year.
First time I've actually ever used them tbh ::)

They have their own flavour and should not really be compared to red or black - even a raspberry would taste bland after eating blackcurrant.  Ripened berries seem to have a subtle aroma and taste like wine gums but a bit too seedy for a fruit salad for my liking - can be made into a very nice home brew though  ;)

I do the blackcurrant cheesecake but without the biscuit base, using low fat cottage cheese as I'm watching my weight. I like blackcurrant compote on fruit, porridge and muesli.  I found another load of them the other day. I was chuffed as I thought I'd harvested them all but it seems the ones in the shade of the hedge were just waiting in the wings. Wahay  :)
