Cranberries What to do with them?

OH came home yesterday with 7 - 300g punnets.  They were selling them off at 4p each so he thought he had a great bargain.

I have never cooked with them so I have no idea what to do.  Can I freeze them? Make a Cranberry vodka? Add with other fruit for a pudding?  Please help.

They freeze really well and the freezing and defrosting process makes them split, which is all the better for vodka infusion  ;)

They make very good chutneys and relishes which would store for months as well  :)  Nigel Slater did a recipe on one of his recent shows where he added cranberry jelly and fresh cranberries to a sausage casserole.  Looked very nice  :)

Check them over really well (before freezing,you won't be able to tell when frozen) as they can be rotten & that would spoil anything you do make.Good bargain.

I bought some to do something with and stuck them in the freezer till I was ready to use them....but can't remember what I wanted them for! ::) Ah well, they'll keep.

Thanks guys, I will stick them in the freezer till I decide what to do with them but sounds like I need a lot of Vodka. :lol: :D

They supposedly dehydrate well but in all honesty I have not had luck doing that. But they freeze beautifully so that's where I keep mine until I need them for various recipes like loaf cakes, relishes, chicken dishes, etc.

Yes they freeze really well and you can add them to a variety of fruit to zing up homemade jams and marmalade.
Red grapefruit and cranberry is a nice combination.  You can make chutneys which will have a chance to mature for Christmas.

You can add them to dried fruit when making  fruit cakes and you can add them to a chocolate brownie recipes with some grated orange and cinnamon to zip up the brownie.

You could also use them in a Christmas pudding mix. I always make my puds in February along with the Christmas cake.
Or mix with equal quantities of raspberries to make a puree and turn the puree into an icecream parfait. :)

That all sounds yummy, I will admit when he brought them home I was a little dismayed but reading this there are some great ideas.

I made cranberry mincemeat with a punnet of fresh cranberries. It takes two months to mature though so it's stashed in the cupboard

My sister, being more organised than I, made hers in time for Christmas, following a WW recipe, and it's really rather good

Have made Cranberry Vodka. OMG it's good stuff, makes your knees go numb!

I used a HFW recipe.

when we lived in greece we saw cranberries on the market one day so we got enough to make a jar for Christmas , we boiled them tryed to get the stone ont of them rubbed them through a sieve but they werent having it i spent hours on them finally i googled them to find they were a european cranberry and they have a stone i finally got enough to make enough for our dinner , lucky it was just for 2 ha ha
