hi, i had a few bottles of full fat milk that had gone a bit off, just enough to taste sour but not split or lumpy,

i have tried to make cottage cheese with it, which has turned out ok but there is something missing in the taste... do you think it's because the milk was off or that i am that use to the taste of supermarket cottage cheese?

i used vinegar instead of lemon juice too might that change the taste?

I've tried both ways of making cottage cheese.  The one that Val has on this website, and another one where you make a buttermilk starter.  Neither of them turned out like my Mam's cottage cheese or supermarket cheese, but the buttermilk/sour milk starter one tasted by far the best, in my opinion of course, between the two methods.

Definitely on the salt. Although vinegar is cheaper, I prefer the taste with lemon juice.

i don't usually use salt in food, it being bad for you and all that, i only added a small pinch... i shall add some more.

I know what you mean, I use the bare minimum wherever possible, but some things just need it. ::) Good luck with your next go at cottage cheese making. :)

I too use very little salt in my foods, but as arugula says, some foods simply need a bit to bring out the flavour, and cheese is definitely one of those foods.
