Anyone tried redcurrant and rosemary chutney

Stumbled across a bbc good food recipe online and wondered if anyone had tried it, we eat more chutney than jam so it makes sense to chutney them than jam  ???

I wonder if that wouldn't be too pippy to bother with.

I do a courgette, tomato, red peppercorn and rosemary chhutney 'cos I like rosemary.

The idea of redcurrant sounds wrong to me. WOuld be interested to see what you think as there is no way I could do it as we don't yet have redcurrants.

You could make a redcurrant and vinegar jelly with rosemary and throw in some crushed peppercorns.

I have just done a cranberry, apple and peppercorn jelly like that which was really good if I say so myself as shouldn't. ::)

Now that sounds good! I have a large bag of redcurrants ready frozen for just such a recipe  :D

I used 2 and 1/2 lb of fruit to 1 pint water simmered until pulpy,
then added 1 pt white vinegar and simmered for another 5 mins.
Put through the jelly bag. measured 1 pt of juice to 1lb sugar and 2 tablespoons of pink pepper corns, 1 of black, 1 of green and one of white crushed in a mortar and added that to the pan and continued as usual to a set.

It was sweet, sharp and peppery and will be really good with roast beef methinks.

WIth redcurrants it will be really good.

Must get some redcurrant bushes.
