Dear Moderator - Egg receipes section?
« on: October 09, 2009, 17:57 »
I was thinking today about a half remembered receipe for tomato claufos ...  or something like that, bit like a cherry receipe but not sweet ....  egg batter I think with parmesan.  Scratches head... ???

Ahhh thought I!  All those chicken people on the allotment forum.  There will be lots of egg receipes.  A whole section of them. :nowink: bound to be.

There isn't.     Can I ask for a new section in receipes for egg ones?  I'll even contribute my tomato claufoius (or however the thing is spelt) when I find it!  Please?

Thats it!  Or nearly.  I'm sure it uses goats cheese in the gaps and dusts with parmesan at the end.  But the important thing is the batter ratios...  thank you!!   :D

I've got lots of roma tomatoes ripening on the windowsill and they worked brilliantly in this last year.  Don't go too mushy.

That's it!  Tonights dinner....   :D With a nice green salad.

Isn't google great when you can spell?  I struggle sometimes and I am one of the lucky ones.  English is my first language and I work with words all the time.  It is one of the issues with the moves to 'digital inclusion' and moving public services online.  It all assumes being comfortable with text and reading / writing.  Which is a very big leap for many of the people that need the help provided by the public services.  ...  Sorry.  How did I get from tomatoes to social policy?   ???

Sorry.   :(  But at least it shows that I have something of a social concience  - even if I can't spell the bleep word!   Conscience, that's what I mean.

And the clafoutis is in the oven and smelling great!

Sorry - I forgot to come back with a receipe report.

It worked will.  The tomatoes (really ripe romas, not too big) were soft and sweet, the batter puffed up nicely and the cheese melted into it so the whole thing had a touch of the flavour without being overwhelmingly 'goaty'.  I used half semi skimmed milk, half single cream because that is what I had and it was good.  More double cream might have made it a bit heavy, but that will be a matter of personal taste.  To improve, the tiniest drop of balsamic vinegar or worcester sauce in each of the tomatoes might give it some extra savour.

I am under instruction to make it again this weekend ...

Well as an instant meal I love this. It is great when you haven't really had time to go shopping and the cupboards are on the bare side.

Make a quick broth (I use tom yum soup paste as I usually have it in the cupboard but veg stock works too), chop in whatever veg you have hanging about and then crack an egg into the boiling broth. Poach it a couple of min and you are done.
Be like a duck. Calm on the surface but always paddling like the dickens underneath.
